Exercise Physiology
Ran across a pretty cool and informative website the other day. It mainly covers physiology, heart rate, lactate thresholds, etc. related to exercising. See link:

This is surely one among many, and is not necessarily specific to cycling. However, the overall concepts are detailed enough to be applied to any form of exercise or training.
